We just received the free NBN Connection Kit sent by Telstra
I understand the info provided - and that "our plan price and data allowance will be the same" - just supplied via the NBN
- however ...
Once transferred, do we then have NBN speeds for our internet? i.e 25 or 50 mbps - or does it run at the old ADSL speed?
(our currebt ADSL runs at 7mbps)

If you have a FTTN your link speed will depend on distance from node. If you are within 500 M of node you can expect to get the full tier 2 speed of 25/5.
If its FTTP the link speed should be 25/5.
The download speed during peak periods could be lower due to congestion. I usually get 12 Mb/s down during peak periods.
So that sounds like we do get "NBN Speed", right?
How do we tell which one of those two we have?
(I think there's a node down the street - Telstra installed a new "switchbaord" box on top of it's old one)
If you have a node down the street you will probably get FTTN. Yes you get the standard Telstra fast NBN speed unless you pay extra for a speed boost.
NBN FTTN is great when it works.
