When I upgrade to the new iPhone with esim on my Telstra post paid mobile plan, does that mean I can travel to New Zealand and use a NZ mobile carriers physical sim (in the phone) and their applicable data plans etc while I’m there with no issues?

If you activate the eSIM for your Telstra mobile service, that will leave the physical SIM slot in the iPhone free for any physical SIM you are wanting to use.
