using iphone and ipad overseas

I am travelling to the USA and Canada in 3 weeks and want to take my iphone 5 and ipad air to use for internet access whilst I am away. how can i use thes items . can i use them in a wireless area, such as the airports, hortels, peoples places i am visiting, without getting a roaming card. if i have to get roaming which i do not want to. who is best to get in these countries and will they work . I will be travelling for 6 weeks

I have been overseas and done exactly what you want to do.

You'll find, although not your specific question that the answers on this page will help. http://www.telstra.com.au/mobile-phones/international-roaming/travelling-tips/

You leave your sim in, and regardless of if you set up the international roaming or not, you can use your ipad and iphone on  WIFI, free at a hotel or coffee shop, or paid etc. 

The following point from the page confirms what you were asking. 

Point 7 - Switch off data roaming when not using data

This prevents email and apps from continuing to run in the background. It's best to keep data roaming switched off any time you’re not using data. Better yet, conserve your data allowance by finding a free Wi-Fi connection for all of your data-intensive applications.

The details at http://www.telstra.com.au/mobile-phones/international-roaming/pricing-compatibility/post-paid/vise that your iPad and iPhone should be able to operate on the 3G network frequencies across North America, and access to WiFi hotspots should also be fine. If you do need to set up International Roaming this can be done either via http://www.telstra.com.au/mobile-phones/international-roaming/activate/ or by getting in touch with our online chat teams at https://livechat.telstra.com/TCOM:Facebook:Consumer. I didnt want to use roaming as it is so expensive. As they are run by wifi, can i not just pick up the wifi at eg, the airports and at hotels with wifi and friends with wifi. Can I leave my sim card that is already in the iphone 5 and ipad air and use them thru the USA and Canadian wifi areas that i will be in. Someone told me that can happen. but make sure roaming is off and my data and I can pick it up.
