If you head into your nearest Telstra Shop on your return to Australia, they'll be activate a new SIM for you, and it should be active before you leave the store.
Otherwise you can call +61 2 9242 0570 and say "Mobile Connection" at the prompt, we should be able to arrange to ship one to your home address. The number provided connects to customer service the same way as if you'd called 13 22 00 from within Australia.
