Just got a Galaxy Watch and am having issues accessing Telstra One number. Spent hours yesterday on live chat but the consultant was unable to help me.
Phone - Galaxy S8
Telstra One service is active
Tried unparing and pairing
Tried resetting my telstra id password

Usually you would open the Galaxy Wearable app on your Samsung phone & then select your watch from the list of devices and pair your Galaxy watch to your Samsung phone.
When prompted during setup, confirm your Telstra One Number subscription and your device will connect automatically to the Telstra network. $5/mth will be added to your monthly mobile bill.
Telstra One Number is only available for Consumer customers and Small Business customers with a 13-digit account number.
