Purchased plan and SIM at Telstra store Friday pm, Sunday am still no activation.

Live chat this am advised that Should ring 180080019 after 0800 this am. Hmmmm.

You can check with Mobile Technical Support by chat   

https://www.telstra.com.au/chatnow/landing   or 132200.

Alternatively, you can contact the store for them to check the system.

If you churned from another providor / network, the time delay is not unusual late Friday.
