It used to be possible to do that from the service number in both the My Telstra app and the My Account webpages, but it has been removed.
You can try contacting the support people by chat or on 132200 but you I would suggest that might actually be better off going to a Telstra store to do this, if you are able to.
Setting up an eSIM can be a bit hit and miss and one little mistake can mean starting all over again with a new eSIM. In the store they should be able to help you and make sure it is done properly before you leave. If it gets done incorrectly, you might be without access to that number for a while.
