Apple Watch not allowing me to use Mobile network

I purchased a new Apple Watch Series 6 and for the life of me I can not connect it to my mobile number. I used to have the Series 5 and took my old series 5 to Apple to get the new one and they unpaired the watch and everything and told me to get in touch with Telstra and transfer my One number to the new device. Easier said than done as when I am trying to connect the new watch to the mobile network it keeps saying "something went wrong, please try again later" . I have been trying to pair my new watch for the past month and no one in Telstra can help me. I have done multiple resets on the phone and the watch and it syncs fine but as soon as I get to adding the Telstra subscription, this is where I get the message. Telstra have checked there systems and can not find any barring on the one number. Any suggestions from anyone would be most helpful.
