I found the following on a Telstra webpage. I bolded the relevant bit which says to use the Watch app on your iPhone (to swap devices). Presumably one then does the reverse with the other device.
No, only one cellular-enabled smart watch can be connected to your Telstra mobile service at a time.
If you wish to connect a different cellular-enabled smart watch, you can do so via the Watch app on your iPhone or the Galaxy Wearable app on your Samsung phone. Doing so will disconnect your currently connected cellular-enabled smart watch from the network.
