I recently bought the Apple Watch series 6 with cellular data. During the setup it automatically switched off the one number plan for my old Apple Watch. I’d actually like to keep using both watches with cellular data, I don’t mind if I have to pay another $5 per month. Is this possible?

No. A plan can only support a single OneNumber device at a time.
Never be afraid to back yourself when trying new things, just always make sure you have 3 escape routes if things go wrong.
