Re: iPhone 5s data usage
It is likely a number of things.
The phone checking for updates, emails, and background apps.
If you go into:
Settings -> Mobile
and scroll down you'll see a list of apps and how much data they have used. You'll also notice 'System Services' as well. My suggestion would be to go right to the bottom and 'Reset Statistics' then check it in a day or two and you'll see which apps are using data, and how much.
You can also disable background usage by app by visiting:
Settings -> General -> Background App Refresh
