We have changed to NBN and now have iiNet as our provider - why has Telstra charged $8.00 Local Number Portability Service?

Because that is the fee that you get charged when you port a landline number away from Telstra. It is outlined in Section 13 of Part A of the Standard Customer Terms and Conditions.
Never be afraid to back yourself when trying new things, just always make sure you have 3 escape routes if things go wrong.
