Soft SIM and Physical SIM
After activating the Soft SIM on an iPhone, does Telstra still allows the original physical SIM to remain active and be used in a different devices, e.g. iPad, so that both the iPhone and iPad can share the data of that mobile account?

No. Once your eSIM is activated, the Physical SIM is deactivated.
Never be afraid to back yourself when trying new things, just always make sure you have 3 escape routes if things go wrong.
