Hi there,
I am an existing Telstra customer on NBN unlimited data plan. I ordered an upgrade to Premium Speed + Unlimited data on January 18 but am still waiting for it to be activated.
I have contacted support through the app and they it would be activated in 24 - 48 hours 5 days ago...
Is this normal, as I am getting a bit frustrated.

A plan change of that nature should only take 48-72hours after placing the order.
Never be afraid to back yourself when trying new things, just always make sure you have 3 escape routes if things go wrong.
