if if I do sign up to Telstra Air would John Smith (fake name) be able to access my home wifi then use all my data without me knowing?

No. It's isolated from your home network and the data used does not count against your usage.

Never be afraid to back yourself when trying new things, just always make sure you have 3 escape routes if things go wrong.
